Vicky Cakes is the brainchild of good food and family. Over 40 years ago, Vicky, a single mom of four, created this recipe using simple ingredients she had in her pantry. Her homemade pancakes became a cherished staple for her children, including her daughter Christian. Years later, as Christian became a wife and mother, she knew she had to share this family recipe with families around the world.

In 2013, Christian’s husband, Cortney, tried the pancakes for the first time at Vicky’s house in Indiana. He fell in love with them and came up with the name “Vicky Cakes.” For seven years, Cortney urged Christian to package the mix. Finally, in 2019, the couple launched Vicky Cakes on Mother’s Day, and the rest is history in the making.

Our co-founder Cortney came up with the name “Vicky Cakes” after eating and falling in love with the pancakes in 2013 at Vicky’s house in Indiana. After 7 years of begging us to package the mix, we decided to launch on Mother’s Day in 2019. The rest is still history in the making.

We live in such a busy society and rarely do families sit down together for breakfast and dinner anymore. Our mission is to bring families back to the table for good meals and good memories. The vision for our brand and products is to be so heartfelt that when you see a bag of Vicky Cakes, you know that LOVE is in those bags, and we’re creating a culture of family value and tradition.

First of all, with Vicky Cakes you don’t need to be a scientist to get the perfect measurements and perfect pancake every time. Vicky perfected this recipe for 40 years! Secondly, Vicky Cakes is not a “just add water” mix; you add a few simple, clean, healthy ingredients to make our light and fluffy pancakes.

The simple answer is no. Our mix is based on Vicky’s recipe, and you can’t condense 40 years of great homemade flavor into an ‘add water only mix. That is why we kept the preservatives and artificial ingredients out of the bag and you have to add 5 simple wet ingredients to the Vicky Cakes mixes. We want you to be able to eat clean and healthy!

The powdered pancake mix is shelf-stable for up to 18 months.

The prepared pancake batter is good in a covered container in the refrigerator for up to 24 hrs. If you have any leftover batter, we suggest you cook them up and freeze them to reheat for a later yummy breakfast date with Vicky Cakes!

The pancake syrup has a 6-9 month shelf life.

The expiration date on the pancake mix bag is located on the back at the top of the bag. The expiration date on the syrup bottle is located either on the cap or on the back of the label.

Every bag creates 10 medium-sized pancakes and 4 large waffles. And, yes you need to make the entire bag using the measurements on the back of the bag.

The ingredients are measured perfectly for the amount of dry mix inside the bag. If you don’t use all of the batter, you can store it in a covered container in your refrigerator for up to 24hrs.

We are proud to say that our products are indeed dairy-free and completely vegan. There are no dairy products like powdered eggs or powdered milk in our products. You can freely use vegan milk substitutes like soy, almond, or coconut milk. You can also use vegan egg replacers like applesauce, JUST Egg, or aquafaba. 

The buttermilk is not required, but it does give your food an extra kick of flavor. You can either make your own vegan buttermilk following the instructions on the back of the bag or simply use more vegan milk in place of buttermilk.

There are plenty of great substitutes for milk and eggs, depending on your dietary needs and preferences!

For Milk:

• Any plant-based milk like almond, soy, oat, coconut, or cashew milk works perfectly.
• Water can also be used in a pinch, though it may slightly affect the richness of the flavor.

For Eggs:

• Applesauce, mashed bananas, or yogurt (dairy-free options work too) are great for binding and adding moisture.
• Store-bought egg replacers are another excellent option.

We’re very proud to offer a collection of gluten-free pancake and waffle mixes. We go above and beyond the industry standards to confirm the safety of our products. And, people with Celiac disease and people avoiding gluten, love our gluten-free mixes!

Our facility does handle pecans, as we manufacture a pecan pancake mix. However, we have very strict processes in place to avoid cross-contamination. Pecan products are made at separate times using dedicated equipment, and the pecans themselves are stored in a completely different area of the facility.

Additionally, we produce gluten-free mixes, and those are created and stored in separate areas of the facility to further ensure the integrity of our products and the safety of our customers.

We take allergen safety very seriously and follow strict protocols to maintain cleanliness and care. If you have any further questions or concerns about allergens, feel free to reach out—we’re happy to help!

No, our syrups do not contain high fructose corn syrup, preservatives, or artificial ingredients of any kind. This is what makes Vicky Cakes different from other syrups.

If your tracking number shows no movement, the order has been shipped and left our facility. However, the carrier hasn't scanned the package yet. And, unfortunately, this happens more than we'd like to admit. After the package leaves our warehouse, the only information we have is what the tracking number indicates. 

If it has been less than 7 days since the order was shipped, wait for another 24-48 hrs and then your tracking number may show movement.

But, if it has been longer than 7 days, the carrier may have lost the package in transit. According to our Shipping Policy, Vicky Cakes is not responsible for lost/missing packages.

In this case, please contact your carrier to file a claim.

We do not offer local pickup at this time, but we are working on implementing it at our Plano, TX facility.

When you place an order on our website, our order processing time is 7-10 business days. Once your order is shipped, the delivery time is based solely on the carrier.

You will receive an email with a tracking link to follow your order from our warehouse to your mailbox.

If your tracking is shown as "delivered", but you have not received it, your package may be delayed with the carrier or it may have been stolen. Vicky Cakes is not responsible for missing or stolen packages. Please contact your carrier to file a claim.
