Vicky Cakes is the brain child of good food and family. My mother Vicky created this recipe over 40 years ago before I was born. As a single mom of four, she had to make it work, so she used simple ingredients she already had in the pantry. My siblings and I enjoyed these delicious for many years, so I knew that when I became a mom and wife, I had to share this recipe with my family and families around the world.My husband came up with the name “Vicky Cakes” after eating and falling in love with the pancakes in 2013 at my mom’s house in Indiana. After 7 years of begging us to package the mix, we decided to launch on Mother’s Day in 2019. The rest is still history in the making.

Most “just add water” mixes are packed with preservatives, fake ingredients, and unhealthy contents. Our mix is more than a “just add water” product. We did not want preservatives, artificial ingredients, or other additives in our mix to compromise the quality and integrity of Vicky’s original buttermilk pancakes.
Plus we want you to be able to clean and healthy, which means leaving out all the junk. There is no artificial buttermilk powder, artificial milk, dried eggs, dairy, or fake blueberries, pecans or chocolate chips in our mix, which makes our pancakes and waffles a step above the rest.
All you need to do is add 5 simple wet ingredients to the dry Vicky Cakes mix to get delicious pancake perfection every time.
Our dry pancake and waffle mix have a shelf life of 12 months from production. Once you mix the dry mix into actual pancake batter, it will last for 2 days inside the refrigerator in a covered container.
We can’t give you the secret, but we can say the fluff is in the bag!
Every bag creates 10 medium sized pancakes and four waffles. And, yes you need to make the entire bag using the measurements on the back of the bag. The ingredients are measured perfectly for the amount of dry mix inside the bag. If you don’t use all of the batter, you can store it in a covered container in your refrigerator for up to 2 days.

Yes you can, that’s what makes Vicky Cakes vegan-friendly. There are no dairy products in our mixes and those who practice vegan and vegetarian lifestyles can use egg beaters and milk substitutes like soy milk, coconut milk, almond milk, and more. You can also substitute the buttermilk.
