1 bag of Vicky Cakes Apple Pie Pancake Mix

1 cup of milk (non-dairy to make it vegan)

1 tbsp of vegetable oil

1 egg

Optional: 1 tbsp vanilla extract/flavor

Cinnamon Sugar Topping

2 tbsp granulated sugar

1 tsp ground cinnamon

Step 1: Preheat and Prepare

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

Step 2: Combine Ingredients

In a large mixing bowl, combine the wet ingredients with the pancake mix and stir until just combined. Be careful not to overmix; a few lumps are okay.
