Who said pancake mix had to stay on the griddle? Turn your favorite Vicky Cakes Pancake Mix into soft, fluffy mini bundt cakes with just a few simple ingredients. Bake ’em, glaze ’em, drizzle ’em, dress ’em up however you want. They’re perfect for brunch, dessert, or anytime you feel like doing a little something extra.

Ingredients

  • 1 bag of Vicky Cakes Pancake Mix (any flavor of your choice)
  • 1 + 1/4 cup milk
  • 1 egg
  • 1 tablespoon vegetable oil

Cooking Tools:

  • Nonstick cooking or baking spray
  • Silicone mini bundt cake molds or mini bundt cake pan

Directions

Step 1: Prepare

Preheat the oven to 375°F. Place your silicone bundt mold on a sturdy baking sheet before filling it. Silicone gets very flexible once filled, so the baking sheet makes it much easier to get the cakes into and out of the oven without spilling.

Step 2: Lightly grease the mold

Even though silicone is naturally nonstick, give each cavity a light coating of nonstick spray, making sure to get into the grooves and around the center post. You don't need much — too much spray can leave the outside of the cakes greasy.

Step 3: Prepare the Vicky Cakes batter

Empty the bag of powdered Vicky Cakes mix into a mixing bowl, add the wet ingredients, then stir. Be sure not to stir too much or too little. When you see bubbles form in the batter, that’s a good sign that the batter is ready.

If you let the batter sit for a few minutes, it will thicken. Simply stir it again to loosen the batter.

Step 4: Add 1/4 cup of batter to each bundt cake mold

Pour slowly so the batter can work its way into the details of the mold. Give the baking sheet one or two gentle taps on the counter to help settle the batter and release any larger air pockets.

Step 5: Bake for 15 minutes at 375°F

The cakes are ready when the tops are set and spring back lightly when touched. To double-check the doneness, insert a toothpick into the thickest part of the cake. It should come out clean or with just a few moist crumbs.

Don't judge them by color alone. Silicone doesn't brown baked goods as aggressively as a metal pan, so the cakes may look lighter even when they're completely baked.

Step 6: Let them cool in the mold for about 5–8 minutes

Don't try to remove them immediately because they will fall apart. Fresh-from-the-oven cakes are very tender. Letting them set briefly makes the detailed edges much less likely to tear. And, frankly, makes them prettier!

Step 7: Unmold carefully

Instead of pulling the cake out, gently peel the silicone mold away from the sides of each cake, then push lightly from the bottom to release it. Pay extra attention around the center of the mold where the cake is easiest to break.

Step 8: Glaze and enjoy

Glaze only after cooling. If the cakes are still warm, a thicker glaze will melt and disappear into the cake instead of sitting nicely over the cake’s ridges.

Glaze your mini cakes with whatever you’d like. We especially like a lemon glaze or cookie butter drizzle. You could also melt chocolate chips and pour that over the cakes. Let your imagination run wild!
