How to Make Easy Fluffy and Tasty Vegan Pancakes

Today you’ll learn how to make easy vegan pancakes that are light, fluffy, and delicious, using Vicky Cakes pancake & waffle mix. Making vegan pancakes is easier than you think. There are 4 steps: mix, heat, pour and cook. It’s as simple as that.

 

Ingredients

1 bag of Original Vicky Cakes Pancake & Waffle Mix

1 cup of non-dairy milk (here are The Best Non Dairy Milk Alternatives For Fluffy Pancakes – we prefer almond milk)

4 ounces of applesauce, which replaces the egg. If you buy a 6-pack, you’ll have plenty for next time. Tip: we recommend unsweetened, unflavored applesauce for the best tasting pancakes. Mott’s Applesauce, 4 oz cups, 6 count is a great option.

1 tablespoon of vegetable oil – Any type or brand of vegetable oil will work fine.

3 tablespoons of water

1 tablespoon of vanilla – This can be found in the baking aisle, and will give your vickycakes a powerful punch of flavor.

And, use some Vicky Cakes Original Syrup to top your pancakes.

Pro tip: If you want an extra flavor boost, you can make some homemade vegan buttermilk using 1 cup of non-dairy milk and 1 tablespoon of lemon juice. However, this is totally optional, but we like it because it gives your pancakes a lot more flavor.

Pro tip: Use pancake cooking rings for perfectly round pancakes that you can flip super easily. Plus, your pancake batter will give you more pancakes.

Directions

Step 1: Mix Your Ingredients

Open your bag of Vicky Cakes and empty it into a bowl. You’ll need the entire bag. 

Next, add all of your wet ingredients into the bowl, and stir. There’s no need to mix the ingredients in any particular order. Just toss’em in and give it a good mix. 

Pro tip: Don’t overmix your pancake batter because your pancakes will come out flat. Mix it just enough so all the ingredients are blended nicely. Your batter should still be nice and thick; that’ll give you fluffy pancakes.

Another pro tip: Leave your pancake batter sitting out at room temperature for 2-4 minutes, because the ingredients will settle together and cook up super fluffy and tasty.

 

Step 2: Heat Your Pan or Griddle

Heat up a little bit of vegetable oil on your griddle or skillet. You can use a basting brush to spread the oil around, or just move your skillet around so the oil coats the whole pan. Let the oil heat to medium heat.

 

Step 3: Pour Your Pancakes Into the Pan

If you choose to use silicone pancake rings, add them to the hot griddle. And, don’t worry– the pancake rings won’t burn or melt because they’re silicone and heat resistant. 

Pour in about ¼ cup of pancake batter. It doesn’t need to be exact, but be careful not to add too much batter to the pan because your pancakes will spread too thin.

If you’re using pancake rings, do not fill the pancake rings to the top because they will naturally rise to the top and fill the entire ring. If you fill it all the way up with batter, it will spill out of the ring and you’ll just end up with a mess.

 

Step 4: Cook Your Pancakes to Golden Brown

Cook your pancakes for about 3-4 minutes on medium heat. DO NOT cook on high because you will burn your pancakes and your family will tell you about yourself. LOL. Cooking low and slow wins the day here. 

After a couple of minutes, you’ll start to see bubbles form on the top of the pancakes. This is a good sign that your pancakes are cooking properly. The bubbles are your safety net. When you see bubbles, remove the pancake rings and flip your pancakes. Then, let them cook on that side for about 1 minute or until golden brown of your liking. 

If you like butter, now is a great time to add it to your vickycakes so that it melts in the pan.

Finally, plate your pancakes and top with some Original Vicky Cakes Syrup and you’ll have a breakfast made in heaven!
