Ingredients

Dry Ingredients:

1 bag of Vicky Cakes Original Pancake Mix

1/2 cup shredded cheddar cheese

Wet Ingredients:

1 cup milk

1 large egg or 1/4 cup applesauce

1 tablespoon melted butter or vegetable oil

1 teaspoon vanilla extract (optional)

Other Ingredients:

1 cup cooked sausage, crumbled (you can use breakfast sausage or any sausage of your choice)

Syrup for drizzling (optional)

Cooking Instructions

Step 1: Preheat and Prepare

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it with cooking spray.

Step 2: Cook Sausage

If not already cooked, cook the sausage in a skillet over medium heat until browned and cooked through. Drain any excess fat and let cool slightly.

Step 3: Mix Dry Ingredients

In a large bowl, combine the pancake mix and shredded cheddar cheese.

Step 4: Mix Wet Ingredients

In a separate bowl, whisk together the milk, egg (or applesauce), melted butter (or oil), and vanilla extract (if using).

Step 5: Combine Ingredients

Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the cooked sausage crumbles.

Step 6: Fill Muffin Tin

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 7: Bake

Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8: Cool and Serve

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Serve warm with a drizzle of maple syrup if desired.
